BROTHY BUCKEYE BEANS (Start of Summer Guide)
Ingredients:
1 bag soaked, washed and strained buckeye beans
2 leeks, sliced
3 large carrots, chopped 3 celery stalks, chopped
2 tsp coconut aminos
2 1⁄2 cups water, or cover beans by 1.5 inches
Instructions:
Simmer all ingredients for 30–40 minutes until tender. Cook with extra water to save the broth and enjoy as you wait! Finish with coconut aminos.
